CIY: Company Eggs, My Way


Saturday was the first Saturday that I could remember where we had nothing really planned.  We went to a birthday party in Orange County but that was about it.   I took an epic one hour nap and caught up on Sailor Moon Crystal because I am that nerdy.  

Sunday mornings I usually like to eat pho at Pho Hong Phat or if I am not hungover, try out a new recipe.  Trying out a new recipe involves finding one on the Internet or browsing Bon Appetit, then trying to adapt it what I have in my fridge.  Enter Company Eggs.  But first What the eff are company eggs? I did a quick Google search and came up with no results.  So I guess it's like when you entertain company? If you know please let me know! I like fun facts.

I've also come to realize that beets are close to perfect. You can eat the tops and not die, they can be eaten raw or cooked. Beets are ugly on the outside but beautiful on the inside and they last forever in the fridge sans tops.  When I like something so much I will doodle it.


Anyways, on to the recipe so you can CIY, cook it yourself!

Here is what I had in my fridge:

Roasted vegetables: sweet potatoes, golden beets, rainbow carrots
cooked breakfast sausage
golden beets with tops
eggs
milk
Pecorino Romano
I always have onion and garlic on hand and you should too.

Armed with this, I made some substitutions:
beet greens for Swiss Chard
Pecorino Romano for white cheddar
whole milk for heavy cream
I added sausage and roasted veg to the recipe, because it doesn't hurt. 
Make all the adjustments for your party size. I don't measure anything...

I also cooked  everything in the 8 inch cast iron so now it is a one pan meal.  I baked it for 15 minutes and the yolks were near perfect. 



Below is the update recipe! 


Preheat oven to 375 degrees.  In a skillet over medium high heat 1/4 tablespoon of olive oil. When heated, add 1-2 cloves of minced garlic, and a 1/2 of an onion diced. Cook and stir around until softened, about 4 minutes.  Add a 2 bunches of a hearty green vegetable.  I used beat tops, but you can use, swiss chard, radish tops, kale or spinach.  

The cook time of the green, depends on the green that you are using. The more hearty green like kale, will take about 8-10 minutes.  A lighter green like spinach, will take about 4-6 minutes. Once your green of choice has cooked down, you can add whatever you have available.  I had roasted beets. sweet potatoes and roasted rainbow carrots and cooked breakfast sausage. Add what you have, mix around for two minutes and then add 1/2 cup of cream.  And cook will almost evaporated. You can use cashew cream for a vegan option and in place of meat you can add soyrizo. And don't forget to season with salt and pepper along the way.


Spread mixture evenly on to a baking dish. depending on how much you plan to make will depend on the size of the dish.  Using the back of a spoon make little dents on the greens,  this is where you will be adding the eggs. Crack eggs into the dents  and add cheese of your liking and carefully place into preheated oven.  Bake, for about 15- 20 minutes, depending on how you like your eggs. If you are not using eggs, bake for about 15 minutes and let it stand for 5 minutes before serving.

Treats on Treats on Treats



I have a sweet tooth.  So much so, that I am a dentist's best friend. Sometimes I think that it is a problem, but how can something so good be so wrong?

Last week we hit up the 85 Degrees in Cerritos.  No lines, but swarming.  We were lucky because it was BOGO anything sea salt drink.  I was also "carb loading" for the Long Beach Half Marathon. 


So what if I was walking it! 


Whenever I go to 85 Degrees, there are people with multiple trays full of treats.  Like they bring additional family members to hold the trays.  It's insane!  I know people have parties and visitors but damn! It's insane what these ladies pack on their tray.  We had a hard enough time trying to decide on two pastries.


As good as these look, I think these would hurt to eat. 

Then there is the Donut Bar in Fountainn Valley. Pictured above are the strawberry and creme donut, the caramel latte donut, the bacon maple bar and the Homer donut. DROOOOLLLLLL!!!  They have strawberry and chocolate milk on tap. Oh and Stumptown on nitro. YESSSS!!!

This Week in SnackChat

A little nibble of a Snackchat this week. There seems to be a little theme going on here.

Tis the Season


I'm not one to drink pumpkin spice lattes or pumpkin bread or much of pumpkin anything. Pumpkin, however, is the sign of Fall. I talk a lot about Fall a lot because it is my absolute favorite time of year.  Absolute favorite.  Towards the end of September the gourds start showing up at the grocery store and farmers markets and it makes me so happy.  This is my happy place.

The Kinfolk Table For Cookbook Tuesday



I just checked the weather for the next 10 days and the temperature in Long Beach will not break 80 degrees! The crowd rejoices! This means I can cook with the oven and not make everyone uncomfortable!

 In this installment of Cookbook Tuesday, I picked a book that doesn't sit on my shelf, it leans against it (yes, I have that many books).A book that, to me, is very romantic.  Romantic in the sense that I want to live with everyone in this book as they are all living the life that I want to make for my family. The Kinfolk Table, like the magazine, Kinfolk, is beautiful. It details the recipes and stories from the growing Kinfolk community in Brooklyn, Portland, Copenhagen and the English Countryside.  It features my favs like Diana Yen pre Cleo the Bunny  It makes me want to have people over and now that the temperatures are dropping I can do some of this!

This is everything I want and more. Look at the fucking leaves on the ground! 


Most of the recipes are one page and so easy!

For the last FBF post about Beast, I was trying to find my Beast menus.  I looked everywhere.  Low an behold, it was parked in the Portland section of the book. DUH! 

The book and the magazines are leaned against my bookshelves.  I don't have many because they are a little hard to find, but I have them! 

I'm in love with a magazine that is the price of a book!

Fall Cleaning

The perks of having a subscription to Bon Appetit is having monthly food porn, inspiration for weeknight meals and reading up on all the food trends.  The cons of having a subscription to Bon Appetit is having a stack of them when you are done reading them and for someone that lives is small apartment, it doesn't make sense to keep them. So I've got quite the collection from last year and a good part of this year that I am will to part with.  You read it right,  I'm giving away my magazines. I am willing to send them off to you too.  I'm giving these away to you first, before they disappear from my life and appear at the Long Beach Out of the Closet.  I've even giving away a copy of The Great Breakfast Book! All are in great condition, but no promises once they hit the mail box.

June 2013: Summer Issue. This issue features picnics and cold noodles.  This is great for Southern California because it is Summer all the fucking time! Three words: Vietnamese Pork Chops.

FBF: Eating Out Portland

I went to Portland the end of  December of 2013 and I realized that I never officially wrote about it. I didn't really forget but it's almost been a year so I totally did. I had the pictures ready but not the content. While I wanted each restaurant to be featured individually, I have to feature them all in a Flashback Friday.   It's better that I do it now, because I am going to Portland at the end of the month. 

Let's start with Sen Yai, in the SE.  You all know my love for anything Andy Ricker and since leaving Portland he opened up a noodle shop. In my eyes he can do no wrong when it comes to authentic Thai food. On a blistering cold Winter night I don't think there is a better comfort food than Thai noodles.  

What I love about brunch places in Portland is that they actually have full bars and the food is better than great. The County Cat was the whole package. Perfectly cooked egg Benedict.  I was in love with this place until I saw the dreaded Guy Fieri Tramp Stamp spray painted on the wall.  It made me only like the place. 


Then we ate at Beast and everything was well.  We were in a hit and run rear ending and   We shared the wine pairing, between three people because when in Portland, right?  You do things like share a $75 dollar wine paring.  This wasn't the first time we dined at Beast. We had brunch there and it was four courses versus six...I think it was six.  I love the seating arrangement here. It's very intimate, so intimate I remember wanting to punch someone because they were talking too loud about being a picky eater.  Good thing it's a prefix menu right?
